Homemade mayonnaise is very easy to make, it isn’t usually made with garlic but I like the flavour. I sometimes use avocado oil with lime it makes a nice change.
Ingredients
1 egg
1 tsp apple cider vinegar
1 tbsp dijon mustard
1 clove garlic
1/2 cup light olive oil , ( I like to use 1/4 avocado oil and 1/4 olive oil ).
1/4 - 1/2 tsp salt
ground black pepper to taste
Put egg, apple cider vinegar, mustard, garlic clove and just under a 1/4 of the oil in a wide mouthed jar - I use a 500 ml Agee jar.
Using a stick blender, blend these ingredients together.
Add the rest of the oil in a slow trickle into the blended ingredients above until all combined. This will thicken as you are adding the second measure of oil.
Season with salt and pepper to taste.
You can keep the mayonnaise in an airtight jar for up to 7 - 10 days in the fridge.
Note; If for some reason the mayonnaise doesn't thicken, take another egg in a glass jar and using the stick blender, slowly pour the thin mayonnaise mix into the egg, this should now be a nice thick mayonnaise.
