Spicy Cabbage Salad

Cabbage is an excellent source of fiber and lots of healthy nutrients.

This is loaded with flavour and is lovely on its own or add a source of protein along side.

Its great to have in the fridge and lasts for days, its so easy to eat healthier when you set yourself up for success by having good food prepared.


Dressing Ingredients

  • 1 tbsp liquid aminos or tamari

  • 1 tbsp sesame oil, (I like toasted)

  • 1 tbsp honey

  • 1 tbsp miso

  • Pinch of cayenne

  • Salt and pepper


Vegetables


  • 1/2 a cabbage roughly chopped

  • 2 carrots, julienne cut , like thin batons.

  • 4 slivers ginger, julienne cut

  • 4 slices fresh tumeric, julienne cut ( if you can't get fresh tumeric, add 1/4 tsp tp the dressing above)

  • 2 spring onions, sliced

  • 1 garlic clove, finely chopped or grated

  • 1 mild red chilli ( optional)

  • 1 cup fresh coriander, chopped roughly

  • 2-3 tbsp sauerkraut or kim chi.


Mix all the dressing ingredients together in a small glass jar.

Put all the chopped vegetables except the coriander and kim chi or sauerkraut in a large bowl and with your hands massage the vegetables for about a minute, 

Add the dressing, push down and mixing firmly, squeezing the veggies so they soften.

Add the kim chi or sauerkraut and coriander.

Serve.

The flavours of this develop over the next day or two.

Its a pretty tasty salad.
